A charcuterie showcase by Cook 3 students at NIC

This year’s Cook three class is the biggest ever at North Island College. Last week the 14 students prepared pate en croute, chicken galantine, seafood mousseline, smoked salmon and a variety of sausages to serve in their grad showcase on Friday afternoon in the Third Course Bistro at the Campbell River campus.

College administration as well as chefs from the community that work with the students attended the event to celebrate the success of this year’s Cook three students.

Tristan Taylor, one of the four students who wasn’t working and was able to attend the event, said he isn’t as good at the finicky stuff but Cook three was a good experience overall.

“It’s a good program for stepping stones,” he said.

Next week the students are taking their red seal certification exam.

“To be able to put 14 students out on the community with a red seal is amazing,” said chef Christine Lilyholm, the lead instructor of the program.
